A wonderful expression of Margaret River shiraz, Paladin Hill Shiraz is sourced from the Wills Domain Estate Vineyard Block Five. This low yielding vineyard on a south westerly slope consistently produces outstanding concentrated low yielding shiraz. Gently harvested in the cool of morning, the fruit without crushing or destemming, was poured directly into small open-top fermenters. Following cool fermentation, the wine was pressed to mature in French oak puncheons before being filtered and bottled.
Provides a distinct point of difference from other cooler regions with its more earthy, savoury and dusty feel adding to the attractiveness of the sweet ripe fruit. The slightly grainy and sinewy tannins are typical of the region, sitting comfortably within the concentrated intense palate. A wine with cellaring potential.
The colour is a vibrant and a dense purple brick red. Lifted complex blackberry and raspberry fruits with subtle elegant, attractive cedary oak. Delicious and concentrated with a succulent savoury and berry mid-palate and plump, slightly chalky tannins that linger on the palate.
Colour: Deep brick red, subtle purple.
Aroma: Complex aromas of liquorice spice violets and dark fruits.
Palate: The palate is savoury, generous rich round and soft, with Rhone like flavours of blueberry clove and pepper on the mid palate. A wine with abundant rich flavours and powerful persistent tannins which are soft and supple.
Food Pairing: Slow-cooked lamb cassoulet, harmoniously accompanied by an array of meticulously selected, farm-fresh seasonal vegetables.
