Description: We believe that Cabernet Sauvignon from the Eden Valley region is one of Australia’s little hidden secrets. Not much is produced, but what is will take your breath away with its complex flavours.
Winemaker Jo Irvine has skilfully crafted this Cabernet Sauvignon to be a true expression of Eden Valley. Great detail is taken through every stage of wine making to ensure the wine expresses the single site estate vineyard and the season it came from.
The “Justice of the Peace” Cabernet Sauvignon is named after Kyara's pioneering ancestor Heinrich Fiebiger, who took on this role in 1890 after being recognised for his dedication and wisdom during the years the region was settled.
Eyes: Opaque, deep red-purple.
Nose: Rich, deep bouquet of red and black berry fruits.
Mouth: An elegant combination of mulberry and briary fruit flavours, supported by a firm, textured tannin finish typical of cool climate cabernet.

Food Pairing: Special occasions only! Maybe paired with roast lamb but honestly this wine is best savoured on its own!
