A premium Margaret River example of a Chardonnay. Hand harvested from a single vineyard, fermented and matured in a selection of French oak barrels.
Buttered toast and butterscotch nose over some white fruits.
Bone dry, medium intensity of ripe pear fruit, subtle vanilla complexity with soft acid structure.
- Winemaking Notes
As in previous year the Chardonnay was hand-picked and whole bunch pressed. Pressing was light to retain the primary fruit flavours with delicate tannin structure. Fermentation was conducted in new and seasoned French hogsheads with minimal barrel stirring. After 9 months in barrel was lightly fined and bottled.
