- Winemaking Notes
The Shiraz, Touriga Nacional and Cabernet Sauvignon grapes were crushed and fermented on skins for only a few days. Fermentation was stopped using low strength grape spirit and then the clarified wine is transferred to large old oak for 2 - 3 year barrels to mature. Following this the parcels are then carefully blended and returned to smaller oak barrels to reach the desired style and average age.
