Crafted from Semillon grown high in the hills above Whitfield in Victoria’s North East and left on the vine to fully develop the intense and concentrated characters of the noble rot. The grapes were harvested on 21st May when the bunches achieved a perfect balance between botrytis characters, fresh fruit and acidity. With a loss of more than 50% of the fresh weight through concentration, the result is the most luscious juice imaginable, which is what defines this botrytis style.
