Our small parcel of Eden Valley Sangiovese was pressed directly off skins to achieve our desired blush pink colour, before cold-settling for 48 hours. Fermenting at cool temperatures with a small number of solids, allowed us to create our beautiful textural and perfumed wine. Finally, our Sangiovese was fermented dry, and then filtered and bottled early to preserve freshness.
We aim to process all orders within 48 hours. Orders received during the weekends will be processed on the next business day.
