The decision to make an Eden Valley Cabernet Sauvignon comes from Angus’ love of the region and the elegant, varietal Cabernet’s it produces. The single vineyard Cabernet Sauvignon comes from a vineyard just outside of Eden Valley. With an elevation of 390 meters it is ideal for this varietal. Producing a complex varietal wine that is well rounded and finishes with silky lingering tannins. All the focus is on varietal fruit expression, with cassis and carefully handled tannins, medium-bodied-plus, yet seems light on its feet.
The fruit for this single-vineyard Cabernet is destemmed and crushed into one-tonne open-top fermenters. The fruit is kept cool for four days before being allowed to warm up naturally to start the fermentation process. After a fortnight on skins, the wine is pressed into seasoned French oak hogsheads (20% new) and raised for a year before bottling without fining or filtration.
Colour: Deep purple crimson in colour, with a varietal complex nose of violets, black currents and plums.
